Ability to set specific practice contacts e.g. Operations Director so that these can be used within individual clients without having to set them for each client individually

Since I am using Elements (and Senta before it) to manage specific practice workflows, this is vital since we can alter peoples roles within the business and then just change which user the custom field relates to (rather then for each individual job where the user is given specifically)
